My peace lily has been my easiest win, honestly. I've had it for two years now and barely do anything—just water when the soil feels dry and it sits in bright indirect light. The thing actually droops when it's thirsty, which is weirdly helpful because it basically tells you when it needs water. Mine's tripled in size since I got it. If you're starting out with houseplants, this one's genuinely hard to mess up.
