My ZZ plant finally put out a new stem after I stopped fussing with it so much. I was watering way too often and moving it around constantly. Now it sits in a bright corner and I leave it alone for weeks, and it's actually thriving. I think the big lesson I learned is that this plant just wants stability and neglect, which honestly suits my forgetful nature perfectly.
