Notes on my Peace Lily

I've had my peace lily for three years now and it's finally huge, but I'm convinced it's only thriving because I ignore most of the "easy plant" advice out there. Everyone says they love humidity, but mine lives in my dry mediterranean kitchen and honestly prefers it there. I water when the soil's actually dry, not when it droops dramatically. Anyone else have a plant that just does better when you stop fussing over it?
